I got an email this morning from my sister for a chain mail type recipe swap thing. The idea was that the recipe was supposed to take about 5 minutes to write down so I instantly thought of this random super easy soup (type thing) that I made the other day for dinner. It was pretty much just a grab whatever I had in my house type recipe. I thought I would share with the world :)
Whatever I can find in my house soup
- 2 carrots
- 2 potatoes
- 2 tbsp olive oil
- 1 onions
- 1 can of lentils
- 3 cups vegetable stock
- 1/2 cup tomato sauce (i used some kind of zesty parmesan and it was really good)
- 1 cup water
- 3 bay leaves
- 1 tbsp dill
- 1 tbsp organo
- 1 1/2 tbsp garlic powder
- chop carrots and potatoes and boil in a pot until just starting to get soft about 3 mins
- in another pot, heat the olive oil. chop the onion and add to pot. cook for about 3 mins
- add carrots and potatoes to the onion pot. add the veg stock, lentils, water and spices
- simmer on med/high heat for 20 mins or so
- add tomatoe sauce and simmer for another 5 mins
- if the "soup" is too thick, feel free to add some more water

Today is the 75th anniversary of the end of Prohibition. I'm so happy it's fallen on a friday so I can truly celebrate tonight without worrying about the reprocussions tomorrow morning.
